Breakfast Muffins

If you are like our family the mornings are crazy busy. We’re trying to get ourselves ready and get Logan ready at the same time. It is super important to make sure to eat breakfast even though it can be the toughest meal to get make for the day. Eating breakfast gives you energy, boost your metabolism and helps with weight control. The following recipe for breakfast muffins is a great way to start your day.

  • Preheat the oven to 350
  • 3 Cups veggies of your choice (peppers, tomatoes, spinach, kale, mushrooms, onion)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup feta cheese or shredded mozzarella
  • Mix the veggies, salt, garlic powder, pepper and cheese in  small bowl
  • Spray olive oil or use muffin paper liners in the muffin tin
  • Place the ingredients from the small bowl inside each muffin tin, pour egg whites over the ingredients in the tin
  • Place the tin in the oven for 20-25 minutes
  • After the muffins cool place them in a container or ziploc bag. You can put the muffins in the fridge and heat up before eating them
